Spinach with toasted pine nuts
- 900g (2lbs) spinach (serves about 4)
- Handful of pine nuts
- Toast the pine nuts in a small frying pan or under the grill – watch them like a hawk as they burn easily!
- Wash the spinach and place in a large pot, heat until wilted – takes about 5-10 minutes
- Drain spinach, add the pine nuts and serve
